Beets Pancakes

Nice pink color pancakes with nice balance of flavors. Eat just like regular pancakes!

INGREDIENTS (for 3-4 people):

  • 2 cups flour
  • 1-1/2 tbsp baking powder
  • 1 tbsp cocoa powder
  • 2 tbsp sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup butter
  • 1 cup cooked beets
  • 2 cups milk
  • (optional) 1 teaspoon vanilla extract

INSTRUCTIONS:

In a side bowl, whisk all the dry ingredients together.
Melt butter in saucepan, then add 1 cup of milk and keep heating until warm.
Blend beets with 1 cup of milk.
In the main bowl, beat eggs. Add beet/milk puree, the butter/milk mix and the optional vanilla. Mix together.
Add progressively the dry ingredients to this main mix and mix gently until smooth (don’t mix too long).
Let it rest 20min at room temperature. Then, make your pancakes! How? Heat non-stick pan on medium heat, then poor dough. Let cook until edges are dry, then flip and let cook.

Eat warm or cold.
